Most stores are limiting how many shoppers are allowed in at a time. Loyd waited 30 minutes outside in line. He was able to find some nice ribs and brisket to smoke. I hope everyone is staying safe during these difficult times. We hung the 15lb brisket in our Oklahoma Joe Bronco Smoker for 5 hours. We sprayed it with cider vinegar every hour. We wrapped it in butcher paper, placed it on the rack for 6 more hours. Kept the temperature at 250, it was like butter, we decided not to trim it. We just seasoned and smoked it. Was the best one we’ve had. The ribs were cut in half and hung for 3 1/2 hours. We didn’t have a chance to record the whole cook. Just took a few pics and a short video of me unwrapping the brisket. Hopefully soon we will be able to make our regular videos with taste tests. These quick videos are just my way of staying in touch with everyone.
Buns
Ingredients
1 Cup Water
2 Eggs
1/3 Cup Oil
1/4 Cup Sugar
1 Teaspoon Salt
4 Cups Bread Flour
1 1/2 Teaspoons Bread Machine Yeast
Egg Wash
1 Egg
1 Tablespoon Water
Place ingredients in bread machine, set it to the dough setting. Remove, cut into pieces. Lightly spray gloved hands with cooking oil, prevents you from adding extra flour. Shape to desired size, cover with plastic wrap that's been sprayed lightly with cooking oil. Let rise 30 minutes or until doubled in size. Apply egg wash, and bake for 14 minutes at 350 degrees. After slicing the buns, I lightly buttered the inside, and toasted the buns in my grill pan.
