Well, here it is - my recipe for egusi soup, a Nigerian soup that is eaten with whatever morsel you choose. I'm not a big morsel eater so sometimes I'll eat this with rice or a lighter morsel like a fresh plantain fufu or brown rice flour fufu (I just call them all fufu, lol). I buy the egusi seeds whole instead of ground for 2 reasons - I like to know what's in my food and ground seeds get rancid (expire) quicker. If you buy them ground then you should store in the freezer for a longer life. I store the whole seeds in the freezer anyway. Give this a try and let me know what you think. Your choice of meat
2/3 cups egusi seeds or 1/2 cup ground
1/3 cup whole crayfish or 1.5 Tbsp ground
2 Roma tomatoes
2 habanero peppers (or to taste)
1/2 medium onion
1 small red bell pepper
Up to 1.5 cups meat broth
1.5 tsp season all (to taste)
1.5 tsp curry powder
1/2 cup red palm oil
16oz container fresh greens or one bag frozen chopped spinach
