Hello there, family! My niece, randomly one day, asked if I could make her a sweet potato frittata and I said sure. Lol. Like I said, a Frittata is pretty much a fancy baked omelette. So, here it is! Hope you give it a try because it actually turned out quite delish. To save some time, you can fry your potatoes instead of baking them. Enjoy the weekend and I'll catch you next week.
1 medium sweet potato (about 5 inches in length)
2 cups of your choice of veggies (diced)
1/4 cup green or white onions (chopped)
5-6 large eggs
1/4 - 1/2 cup of cheese (optional)
3 or so tsp of oil
1/4 tsp thyme
Salt and pepper to taste
