Hola folks! Hope you are well. Took some time out to cook today. I haven't been out shopping for a long while so I don't have any egusi seeds. So, I figured I'd make the soup the way I did back in the day when African food supplies weren't as available as they are now. Today we are using sunflower seeds as a substitute for the egusi. Give it a try and let me know. Stay well and I'll catch you next time.

1 cup organic sunflower seeds
1.5 cups water
1 cup meat broth
1/2 tomato
1/2 red bell pepper
1/4 onion
1 habanero (or to taste)
1/2 cup palm oil
1/4 cup ground crayfish (1/2 cup whole)
1.5 tsps season all (or salt to taste)
1 tsp curry powder (optional)
10 oz of chopped spinach (or less)
Whatever protein source you choose
