First, press Z on a Simian Spring pad to do the little bounce that comes before a Simian Spring. Right before you launch into the air, press B. If you time it right, you'll do a standing attack while you're rising up. You can then jump out of the standing attack and do an aerial attack to get slightly more height than a normal Simian Spring. In this video, I do a startail, then a normal Simian Spring; look at the marks on the candle to see the height difference. I call this trick the startail because it's similar to the moontail, but it gives you a lot more height.
