Ingredients - Makes 12 Cupcakes
280g Plain Flour
10g Baking Powder
100g Butter
135g Caster Sugar
2 Eggs
Dash of Vanilla
130ml Milk
50g Dark Cocoa

To make the eyes
1 Egg White
250g Icing Sugar
squeeze of Lemon Juice
Black food gel dye and a thin paintbrush

Coffee Icing
100g Softened Butter
125ml of Milk
40g Instant Coffee and 20 ml of hot water to dissolve
1000g Icing Sugar
