A study published in Nature Metabolism (PMID: 38429390) followed 12 healthy people who completed a 7-day, water-only fast. The researchers tracked approximately 3,000 proteins and discovered a massive biological shift that occurred around day three.

We’re told fiber is always good—but that’s not the full story. A landmark randomized controlled trial from Stanford tested different fiber types and found that one common fiber, when taken at high doses, significantly increased ALT, a marker of liver injury, in a subset of people. The effect was large enough that researchers stopped the study early for safety concerns.
At lower doses, the same fiber may improve insulin sensitivity and reduce fatty liver, highlighting a key takeaway in nutrition science: dose and individual response matter. This isn’t about fear—it’s about context over dogma.
