How to make a sourdough starter, this was my mothers way. See description for complete instructions.
Ingredients:
2 cups all purpose plain flour
1 packet yeast (fresh, dry, instant, fast are all fine)
2 cups warm water
Ingredients for LATER USE:
1 cup all purpose plain flour
1 cup milk
1/4 cup sugar
1. Mix all ingredients, then allow to rise uncovered for 24 hours if you have a hot kitchen.
If you are in a cool to just warm kitchen allow to rise uncovered for 48 hours.
2. Give it a mix and place plastic wrap over the top and put into your refrigerator for 7 to 10 days, trying to go for 7 days.
3. Remove 1/2 of the mixture and discard. Then add one cup of plain flour, 1 cup of milk and 1/4 cup of sugar. Cover with plastic wrap and place into the refrigerator.
4. Give the mixture at least 2 days or 3 days.
5. You can use the mixture now in your recipes.
6. If you do not use the starter, then after 7 to 10 days after Step #3, you must throw half away and add your flour, milk and sugar again to keep your starter going.
7. You can keep this starter forever as long as you weekly or every 10 days throw half away and add your 1 cup of flour, 1 cup of milk and 1/4 cup sugar.
8. Just a note.... if you keep using your starter for recipes, you do NOT need to throw away half the mixture because you are using up your starter as each week passes.
9. Store your starter in a glass, ceramic or plastic container.
