Chop Suey! Moms cooking again!

2 to 3 lbs pork chops cut into cubes
2 small calamansi, juiced (small lime or kumquat)
2 Tablespoons vegetable or olive oil
1 medium onion sliced
4 garlic cloves, minced
1 small head cabbage, sliced
1 lb green beans, cut in 1" pieces
Green onions, about 1/4 cup, chopped
2 red bell peppers, seeded and sliced
4 carrots, peeled and sliced thinly
2-3 teaspoons patis (fish sauce)
3 Tablespoons dark soy sauce (I used a japanese one I had on hand) Dark soy has richer flavor
S&P to taste
Mom used a bit of Southwest Chipotle seasoning. You can make the blend from the recipe here blog.tupperware.com/recipes/diy-seasoning-blends

Season the pork with calamansi juice. It helps tenderize and add a nice flavor to the meat.

In a large 5 quart pan, heat to medium and add oil. Brown the garlic, then onions. Add tomatoes and cook down then add green onions. Turn the heat up to medium high and add the cubed pork. Cook until browned and soft.

Add soy sauce, fish sauce, and seasonings. Check for taste. Add all the vegetables and cover. Cook covered for about 5 minutes until softened. Stir to get all the flavors mixed up and taste for seasoning again. Add more salt and pepper if needed. Turn heat off and leave cover on and the residual heat will continue to cook the veggies down. Done!
