Try this for a tasty side dish, or add some grilled chicken or pork for a whole meal.

Ingredients:

1 or 2 medium sweet potatoes
2 tbsp. maple syrup
1 tsp Dijon mustard
1/2 or 1 whole onion sliced. (I used 1 medium sweet potato and 1/2 chopped onion, was a good amount for 2 people)

Put all ingredients in a large baggie and mix until the potatoes and onions are coated well.
Cover the dish with foil and bake in a 425* oven for about 20 minutes until potatoes and onions are soft.
