The history or origin of Shipwreck Casserole is very vague and there are many stories. The one story that popped up over and over is when the ship was sinking the sailors grabbed what they could for food before getting on the lifeboats. Ensuring that when they got to land, they would have food. This is my version.
Ingredients:
1 lb. of ground beef
1 can of diced tomatoes
1 can of corn
1 can of black beans drained and rinsed.
2 cups of water.
2 cups of Macaroni noodles.
1 8oz. package of shredder cheese.
salt and pepper to taste and any special seasoning that you like.
1. In a large skillet crumble the beef and brown over medium heat.
2. Add all the other ingredients stir and put a lid on the skillet.
3. Cook until the noodles are soft and add remaining cheese. Turn off the heat and let cheese melt.
