My mom shared her chicken macaroni salad with us this morning. This is something she made for special occasions and potlucks. This is MY first time actually getting the recipe from her. That's how special YOU are to her LOL!
She used her microwave pressure cooker to cook the chicken. A whole chicken with 1 cup of water. Season very lightly with salt and pepper. Cook for 25 minutes. Pull the meat off with a fork and shred. You can also use our power chef to chop the meat up.
Due to the amount of macaroni she cooked, she did it in a large pot on the stove. If you were cooking a small amount, you can use our smart multi cooker to boil 1-1.5 cups of elbow macaroni while steaming your chicken breast/thighs in the colander above it in 15-20 minutes.
Recipe:
2 lbs elbow macaroni
6-7 cups shredded chicken
30 oz Best Foods Mayonnaise (Or Hellmans)
1 lb shredded mild cheddar cheese
2 - 12 oz jars maraschino cherries, drained
3 - 20 oz cans pineapple chunks, drained
6 oz raisins (Mom bought the 12 oz box. We used half)
1 - 12 oz jar sweet relish
1 - 14 oz can sweetened condensed milk
In a very large bowl (we are using a 42 cup thatsa bowl), combine ingredients slowly and mix gently until all incorporated. You can add salt if needed at the end based on taste. We didn't need to add any. Allow to chill and rest for a few hours or overnight. It tastes better the next day. :)
