I used the stack cooker today to make a 3 course dinner. Potatoes, meatballs, and cherry crisp.
Cherry Crisp
12 oz frozen cherries
1/2 cup rolled oats
1/4 cup light brown sugar
2 teaspoons corn starch
2 Tablespoons unsalted butter
1/4 cup flour
1/2 teaspoon cinnamon
Coat the frozen cherries with corn starch. Place in the 3/4 quart stack cooker cover. Combine the rest of the ingredients in a bowl, cutting the butter into it until crumbly. Top over the cherries.
Meatballs
1 lb ground beef
1/2 teaspoon worcesteshire sauce
1/2 cup breadcrumbs
1 egg
1 teaspoon onion salt
1/2 teaspoon garlic salt
1 Tablespoon BBQ sauce
Mix in a bowl and form into balls. Place in the 1-3/4 quart casserole (middle bowl of stack cooker). Put balls along the perimeter of the bowl and avoid the center. It will cook better along the edges.
Mashed Potatoes
3 large russet potatoes
1 teaspoon salt
Heavy Cream
Butter
Shredded cheese (optional)
Sour cream (optional)
Peel and cut potatoes into small chunks. Add water to about the same level as the potatoes into the 3 quart casserole (bottom bowl). Season with salt.
Stack all layers of the cooker together and cook for 15 minutes. Check for doneness of each layer and cook for more time if needed per layer. Sometimes one section will be done first and thats ok.
Use the colander section of the stack cooker to drain fats and water from potatoes when done cooking.
Using the masher, mash the potatoes and add the cream, butter, and other seasonings you'd like to flavor your mash. Or you can serve it as chunks with cheese on top.
The entire stack cooker is dishwasher safe.
**Cook times will vary based on microwave wattage. I use a 1,100 watt microwave.**
