Tupperware Pressure Cooker Beef Broccoli and Carbquik Muffins

It's been a while since I baked ANYTHING so this was one of those winging it kinda lives. I am NOT a baker nor am I good at it either. So if you're a baker, just enjoy the shenanigans.

I was live on Instagram AND Facebook simultaneously. So you'll hear PAKA laughing in the background coming out of my 2nd phone during this live. He was coaching me through the process and I'm the worst student LOL!

Basic Carbquik Muffins
2 cups Carbquik
1 teaspoon baking powder
2/3 cup half and half
1/8 cup water
1/3 cup Splenda
2 tablespoons vegetable oil
1 whole egg, beaten

Place in lined muffin tins or silicone baking pan and bake at 400 degrees for 13-18 minutes.

If you watch the video, I had NO half and half so I used heavy whipping cream. Please don't ask how much of anything I used, cause I don't know. lol! BUT, I will say this...it came out like a moist bread pudding. The kids LOVED IT!

I used at least 2/3 of heavy whipping cream. More like 3/4 cup and way more water than 1/8 cup.

Beef Broccoli

2 lbs teri beef cut in 2" pieces
10 garlic cloves, some whole, and some finely minced
2 large thumbs fresh ginger, sliced and some finely minced
2 cubes of beef boullion
Water (to cover meat)
1/4 cup soy sauce
2 teaspoons stevia (use 1/4 cup light brown sugar if not on keto)
14 oz frozen broccoli
3 Tablespoons corn starch

Place meat in microwave pressure cooker. Add meat, 4 cloves of garlic, whole or crushed, 1 thumb of sliced ginger, boulloin, soy sauce, stevia or sugar, and water to cover the meat.

Cover and cook for 25 minutes. While that cooks, using the chop n prep, finely mince the remaining garlic and ginger.

Allow 5 minutes to depressurize. Add in the remaining ginger and garlic. Remove some of the sauce and mix with corn starch to make a slurry. Add back to the pot. Top with with frozen broccoli. Cover and cook 7 minutes. Done!

**Cook times will vary based on microwave wattage. I use a 1,000 watt microwave.**
