Here's how I made lumpia from my food storage. You can use anything you want in the filling. This would be great with fried rice or lo mein.
Lumpia Wrappers
2 cups all purpose flour
2 tbsp. tapioca flour (also known as tapioca starch)
1/2 tsp. salt
3 cups water
Mix all ingredients together well. Heat a griddle to 300 degrees and spread the batter out in a circle thinly. Cook until it looks dry then flip it over and cook a few seconds more. Fill the wrappers with any filling of your choice then fry until golden brown. You can refrigerate or freeze any unused wrappers.
