Here's how I made homemade Twinkies. The filling is a flour frosting. I used the recipe from King Arthur Flour's website.
Flour Frosting:
2 tbsp. all purpose flour
1/2 cup milk
1/2 tsp. vanilla
4 tbsp. salted butter
4 tbsp. shortening
1/2 cup granulated sugar
dash of salt
Cook flour and milk until it forms a paste. Cool for one minute and add vanilla. Cover with plastic wrap to prevent the flour paste from forming a skin. Cool completely. Cream together the butter, shortening, sugar and salt. Add the flour mixture to the sugar mixture and beat for 5 iminutes at medium high speed. This frosting can be stored at room temperature for 3-4 days.
