Here's how I make Jalapeno Poppers.
Filling:
1 (8 oz.) pkg. cream cheese, room temperature
2 tbsp. minced jalapenos (optional)
2 tbsp. vinegar from canned jalapenos
Mix all the ingredients together thoroughly.

Egg Wash:
2 eggs
an equal amount of buttermilk
Mix together thoroughly

Prepare about 24 jalapenos by cutting off the stem end, cutting them in half and removing the seeds. Fill each jalapeno half with the cream cheese mixture then dip in egg wash and roll in all purpose flour which has a little salt added to it. Then dip the jalapeno in the egg mixture again, then roll in plain bread crumbs which have had some salt added to them. Deep fry in shortening at 350 degrees for about 1 minute. Drain on paper towels then enjoy! Makes about 44 jalapeno poppers. These freeze extremely well. Reheat at 400 degrees for 12-15 minutes.
