A different take on a grilled cheese sandwich, Lasagna Grilled Cheese. Full recipe in description below video. You can make up to four sandwiches with this recipe.
Ingredients:
You can use leftover lasagna if you wish, but only a couple layers of your leftover lasagna. I made a vegetarian lasagna for this recipe but using some pepperoni in the lasagna is extra good.
This is how I made the quick lasagna.
I took 2 Tablespoons chopped onion and sautéd it in one Tablespoon butter and 2 Tablespoons olive oil. I did this slowly and gently.
Then when soft I added 2 Tablespoons Tomato Paste and 2 anchovies and cooked for two minutes. Then I added 1/3 cup red wine and reduced it down to almost nothing. Then I added one 28oz can of tomato sauce along with 1/2 teaspoon of Italian Seasoning and 1/2 teaspoon dried oregano. Cooked this for 15 minutes to marry flavors.
I used an 8 X 8 baking dish.
Put some sauce down, then 2 pieces of Barilla "No Boil" lasagna noodles.
Then I took 1/2 cup of ricotta mixed with 1/4 cup parmesan for the next layer of lasagna.
Then added 2 more pieces of the Barilla no boil lasagna noodles.
Topped that with more sauce and some parmesan.
Baked it for 35 minutes @ 350F until bubbly.
Allowed this to cool to room temperature.
For the bread, I melted butter and garlic to make a garrlic butter, but plain soft butter would be fine.
I used shredded mozzarella, but sliced cheese would work great as well.
Mozzarella is great, but provolone and mild American or cheddar mixed in is excellent as well.
If you did not have any pepperoni in your lasagna, you can layer that in with the cheese as well.
