Always on a quest to connect with the local culture of the countries I visit, in Laos I decided to take a cooking class with Lao Experiences. In a lovely garden on the banks of the Mekong River, three Lao ladies walked me through the preparation of Mok Pa, fresh fish pounded with local spices and wrapped in steamed banana leaves; vegetables roasted on skewers, whole fish crusted in salt and roasted over hot coals, two types of dipping sauces, spicy papaya salad, and sticky rice and mangoes. Not only was it a perfect way to learn about Lao culture, it was a delicious way to spend an afternoon.
