A delicious side recipe includes blackeye peas with rice and tomatoes. Simple to make but sooo good.

Blackeyed Tomato Rice Recipe
3 slices of bacon
1 medium onion chopped
2 cloves of garlic chopped
1 15 oz can blackeye peas drained
1 14.5 oz can of stewed tomatoes undrained
1 cup of cooked regular rice
1/4 tsp salt
1/4 tsp black pepper
Cook bacon in a skillet until crisp
Remove bacon and leave 2 TB of drippings in the pan
Crumble the bacon and set aside for later topping
Saute onion and garlic in the bacon drippings until tender.
Add remaining ingredients while stirring well.
Transfer the mixed ingredients into a 1.5 quart casserole dish.
Bake in the oven at 350 degrees for 30 minutes
Top with the crushed up bacon.
