This was filmed Dec. 9 -10, 2016. I want so badly to satisfy your love of fishing, that I’ll try just about anything to bring you angling action. But sometimes the climate and the elements are just too brutal to allow it. Come join me aboard the ice breaker, SS Juanelo, and in the kitchen. Cooking bacon. From http://baconmethod.com. Here's how:
1) Line a pan with the bacon. You can use a glass baking pan, a steel or aluminum baking sheet, or even a cast iron pan.
2) Put the pan into a cold, unheated oven on the middle rack.
3) Set the oven to bake at 400°F (204°C).
4) Set the timer for 20 minutes. It may take a bit more or less time, depending on your oven. Mine was perfect after 24 minutes.
5) Remove the pan from the oven. Place the bacon on a plate (or a plate lined with a paper towel if you’re grease averse).
6) Enjoy the best, crispiest, most delicious bacon you’ve ever had.
Tips: You don’t need to cover the pan, it won’t mess up your oven. Line the pan with aluminum foil or Silpat for easier cleanup. Don’t use a baking rack to "keep the bacon out of the grease."
BLT (with Cheese and Onion) Wraps Recipe:
This recipe was inspired by the one found here: allrecipes.com/recipe/31845/blt-wraps
INGREDIENTS
1 pound bacon (cooked crispy)
Four 9 to 10 inch flour tortillas (I used low-carb tortillas)
2 or 3 slices of sharp cheddar cheese per tortilla
4 ounces of onion slices (optional)
⅓ bag of Italian salad greens
12 grape tomatoes, sliced into fourths
3 to 4 heaping teaspoons of mayonnaise per tortilla
DIRECTIONS:
Cook bacon per instructions above.
Drain, and set aside.
Lay down 2 or 3 slices of cheese on each tortilla.
Place 1 tortilla on a microwave-safe plate.
Cook in microwave just over one minute, or until cheese is melted.
Immediately top with ¼ of the bacon, onion, lettuce, tomato and mayo.
Roll tortilla up (I was unable to roll them burrito style but it didn’t matter)
Repeat with remaining ingredients.
Cut each wrap in half, on a 45° angle, before serving.
THE BOAT: is a Bass Hunter that I ordered from Bass Pro Shops about 12 years ago. They no longer sell it. Also, the Bass Hunter company seems to be out of business. Boats like it are still sold under the name Sun Dolphin. Do a Google search for “two man fishing boats.”
THE BAIT: live mealworms threaded on a 1/16 ounce Gopher Mushroom Head jig.
THE SPINNING REEL: is a Pflueger Trion GX-5. This model is no longer made.
THE SPINNING ROD: is a tiny Daiwa SMC401ULFS Spinmatic-C SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Amazon, Fish USA, and other places.
The spinning reel line is SpiderWire, Ultracast, Invisi-Braid in 10 pound test, 2 pound monofilament equivalent.

THE LAKE: is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp.
LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The larges crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill, but it had to be at least 10 inches. Finally, my largest bass was 6¾ pounds caught here at Lake Ketchabigwon.

![Fishing for Crispy Oven Fried Fish
I’ve tried oven-fried fish before but it didn’t come out crispy. I’m determined to do an oven fried recipe that is actually CRISPY! I may have found one. I’ve got all the ingredients, except one. You know what it is. The fish! Let’s see if we can catch some!

Cauliflower Rice with Pico de Gallo

10 oz. bag of “Trader Giotto’s” frozen, riced cauliflower (Trader Joe’s)
4 or 5 ounces of slivered or diced onion
3 tablespoons butter, or oil, or a combination
4 or 5 ounces of pre-made pico de gallo from supermarket
⅛ teaspoon garlic powder
¼ teaspoon cumin
In a very large skillet sauté the onion in butter and/or oil until tender.
Stir in the grated cauliflower, then the remaining ingredients. Mix well.
Simmer 10-12 minutes until the cauliflower is tender, stirring occasionally.
Oven Crisp Fish Fillets

Ingredients
1 to 1½ LBS. largemouth bass, bluegill, perch, (or mild, white fish of your choice)
2 large eggs, room temperature
2 Tbsp lemon juice
2 cups low-carb bread crumbs
1½ tsp dill weed
½ tsp kosher salt
1½ tsp white pepper
1 TB. garlic powder
1 TB paprika
1 TB Old Bay seasoning
Directions
Preheat oven to 400 degrees F.
In a small bowl add eggs salt, pepper & lemon juice, then beat till blended together.
In a large zip lock bag or bowl, add the panko bread crumbs, paprika, old bay seasoning, dill & garlic powder, shake or stir to blend together.
Add a wire baking rack to a baking pan, lined with foil, then spray with non stick cooking spray.
Dip fish into egg batter then coat both sides of fish with low-carb bread crumbs mixture. Place on prepared wire rack, leaving a little space between each piece for even heat distribution. Spray lightly with non stick cooking spray.
Bake in preheated 400 degree F. oven for 10 minutes or until fish flakes easily with fork. Serve with lemon wedge & tartar or Hot Sauce as desired.

WHY KEEP SMALL BASS:
We had biologists come out and do an electroshock survey of the lake. They found too many small, stunted bass. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.
WHY I DON’T FISH FOR CATFISH
Yes, there are channel catfish in the lake but I’m not knowledgable about how to fish for them. Rigging for them is confusing to me. Also, I don’t enjoy sitting and waiting for a bite. It seems boring.
