If the ice on the lake ever gets thicker, we could ice fish out where I know the fish are! I tried a little fishing from the dock, but no luck. So how about we make wienerschnitzel? The challenge is to make it low carb! Click on SHOW MORE for info & the recipes.
WHERE TO GET A CAP LIKE MINE: You can get a “Juanelo Bait & Tackle” cap here, inkpixi.com/by-clothing-type/baseball-hats. In fact, you could put your own name on it!

CAULIFLOWER HASH BROWNS
recipe inspired by the one found here: dietdoctor.com/recipes/low-carb-cauliflower-hash-browns
INGREDIENTS
1 LB riced cauliflower
4 eggs
1 cup shredded sharp cheddar cheese
1½ teaspoons of lemon pepper
½ teaspoon baking powder
½ yellow onion, grated
¼ cup coconut flour
1 tsp salt
¼ to ½ teaspoon pepper
4 oz. butter (one stick), for frying
DIRECTIONS
Add cauliflower to a large bowl. Drain the juice from the grated onion. Add it and remaining ingredients (except butter) and mix well. Set aside for 5–10 minutes.
Melt a generous amount of butter on medium heat in a large skillet. The cooking process will go quicker if you plan to have room for 4 to 6 pancakes (about 3–4 inches each in diameter) at a time. Use the oven on low heat to keep the first batches of pancakes warm while you make the others.
Place scoops of the grated cauliflower mixture in the frying pan and flatten them carefully until they measure about 3–4 inches in diameter.
Fry for 4–5 minutes on each side. Adjust the heat to make sure they don’t burn. Be patient. If you flip the pancakes too soon they may fall apart!
PORK WIENERSCHNITZEL (with optional sauce)
Recipe inspired by the one found here:
tasteofhome.com/recipes/pork-schnitzel-with-sauce
INDREDIENTS:
¾ LB (about 8) veal or pork cutlets, pounded or sliced very thin
1 cup almond flour
2 teaspoons seasoned salt
1 teaspoon pepper
3 large eggs
3 TBS heavy cream with 2 TBS of water
1½ cups ground pork rinds
¾ cup of parmesan (I used Romano in video)
2 teaspoons paprika
2 to 4 tablespoons vegetable oil (2x the orig. recipe)
SAUCE FOR WIENERSCHNITZEL:
(not shown in the video)
⅔ cup chicken broth, divided
⅛ teaspoon xanthan or guar gum
3 tablespoons sour cream
¼ teaspoon dill weed
Salt and pepper to taste
DIRECTIONS:
Meat should be flattened to about ¼ inch or a bit more thickness. In a shallow dish, combine the almond flour, seasoned salt and pepper. In another shallow bowl, combine egg, cream and water (beat well). Place pork rinds, parmesan and paprika in a third shallow dish. Coat meat with almond flour; dip in egg mixture, then allow it to drain. Then coat with pork rind mixture. Place on a plate and let stand for 5 minutes.
In a large skillet, cook pork in oil for 2 minutes on each side or until browned. Remove to dish and keep warm in oven.
FOR THE SAUCE (optional):
Stir ⅓ cup broth into a skillet, scraping browned bits. In a bowl, combine remaining broth with xanthan or guar gum and whisk until smooth. Stir into skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; stir in the sour cream, dill, salt and pepper; heat through. Serve with cutlets.

![Slip Bobber Fishing for Crispy Italian Fillets
I made potato-crusted fish before with low-carb flakes. It was one of my best recipes ever. But I want to change up a little on that recipe. I found another even more suited to my Italian taste buds. I have all the fixings, ah, ah, ah, except the fish. Let’s catch some bluegill! See the recipes, fishing equipment, and much more below.
Recipe for roasted red pepper salad

½ of sweet onion cut to form arches
¼ teaspoon of garlic powder
20 sprigs of Italian parsley, leafy top parts only, rough chopped
2 ounces of shredded Fontinella cheese
Fresh cracked pepper to taste
Salt to taste
Directions:
Mix all ingredients in a medium bowl and let marinate in refrigerator for at least an hour.
Recipe for Crispy Italian Fish Fillets
Inspired by the recipe found here: http://www.hungryjack.com/recipes/potato-crusted-fish-fillets-3956
INGREDIENTS
2 large eggs
⅓ cup heavy cream
1 (inner) pack Carb Counters Instant Mashers by Dixie USA
[if not worried about carbs, 3.75 ounces of potato flakes]
6 tablespoons (⅓ cup) grated Parmesan cheese
2 teaspoons of Italian seasoning
1 pound mild fish fillets like, bluegill, perch, bass, catfish, walleye or crappie
1 stick of butter
½ cup of peanut or vegetable oil (enough to coat the bottom of large skillet)
Salt and pepper
Lemon wedges (optional)
PREPARATION INSTRUCTIONS
Beat eggs and cream in a shallow bowl. In a small glass casserole dish, blend potato flakes, parmesan cheese and Italian seasoning. Rinse fish fillets; pat dry. Season with salt and pepper.
Heat the butter and oil in large frying pan over to between 350 and 375°F. Coat fish fillet with egg mixture, and then into potato flakes, pressing flakes onto fillets to coat well.
Fry fish, about 2 minutes per side, or until golden and fish flakes easily with fork. Do not crowd the skillet. Do the fish in batches if needed. Serve with lemon wedges.
FISHING EQUIPMENT
The red bobber stopper plastic things are believed to be Arnold Tackle Speed Stop Bobber Stops from Bass Pro Shops. Similar ones are sold by Bass Pro Shops. The bobber is a 4½ inch by ½ inch Thill slip bobber which seems to be discontinued.
HOW TO USE A SLIP BOBBER. Here is a video I made a few years ago on using a slip bobber: https://youtu.be/McekvQODG7s
THE HOOK is a 1/16 ounce lead jig head in chartreuse probably from Bass Pro Shops.
THE ROD is over 20 years old. It is a Shimano Stimula, S150UL2B, Length 5’0” line weight recommended 1-4 lbs. Lure weight 1/16 to 3/16 ounce.
THE REEL is a Shimano 1000, recommended line weights of 2 to 6 pounds. It is over 20 years old and seems to be discontinued.
THE LINE is Sufix 832 braid in low-vis green, 10 pound test, 4 pound monofilament equivalent.
THE BOAT:
The boat is a Bass Hunter I ordered from Bass Pro Shops about 12 years ago. They no longer sell it. Also, this model is no longer available, but newer models like it are still sold. Check here: http://www.sportsmansguide.com/product/index/bass-hunter-ex-96-boat?a=670576&pm2d=CSE-SPG-15-PLA&utm_medium=PLA&utm_source=Google&utm_campaign=CI&ci_src=17588969&ci_sku=WX2*0186929000000&gclid=COz4v7CNocsCFQmQaQod EG4g
THE LAKE:
Was named Lake Ketchabigwon by the native Americans who sold me the property for a good amount of wampum. It is almost 6 acres and is located in NE Ohio. It is private.
FISH IN THE LAKE:
largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp.
LARGEST FISH CAUGHT FROM THE LAKE: The biggest was a grass carp which I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The largest bass was 6¾ pounds which I caught here at Lake Ketchabigwon. The largest crappie was 14¾ inches, and weighed 2 LBS 1 oz., the largest bluegill was about 10 inches but I did not take measurements. The largest yellow perch was over 12 inches but I do not remember the exact measurement.
