Three years ago I made Oaxacan spicy fish. It was a popular video, and the recipe was delish. I’ve got to try it again. So I picked up all the ingredients, ah, except the fish! We need to catch some! Click on SHOW MORE for info on the tackle, lake and recipes.

THE MOTOR: A Minn Kota, Endura 55 with short shaft, 55 LBS of thrust. It runs on a 12v, deep cycle battery. This exact model has been discontinued.
THE LURE is a ⅛ ounce Strike King, Mini King spinnerbait in red.
THE BAITCASTING REEL is a Shimano Calcutta 50B, from 2004. This model is no longer made.
THE BAITCASTING LINE is Firewire Stealth Braid in moss green, 15 LB test, 4 LB monofilament equivalent.
THE BAITCASTING ROD is a Shimano Compre, Model CPC68MC, 6’ 8” fast action, medium power. Suggested lure weight ⅛ to ¼ ounce. Suggested line weight 6 - 12 pound test. Purchased April 2016.
THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private. It has a maximum depth of 12 feet. The small pond is ¾ acre with a maximum depth of 12 feet.
FISH IN THE LAKE are largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS AND RETURN LARGER BASS: We had biologists perform an electroshock survey of the lake. They found too many small, stunted bass. There is only so much biomass to go around, and there are too many mouths to feed. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.

GUACAMOLE RECIPE
2 Large Avocados
¼ large sweet onion chopped
1 teaspoon of lime juice
10-12 cherry tomatoes sliced into 4 pieces each
4 oz. can of chopped chile peppers
1 teaspoon of lime juice
2 TBS. of sour cream
½ teaspoon of salt
¼ teaspoon of ground pepper
½ teas. garlic powder
4 sprigs cilantro chopped (optional)
DIRECTIONS
Mash avocados with a fork, then add all other ingredients while stirring.
SPICY OAXACAN FISH

INGREDIENTS:
4 6-ounce portions of small mild white fish like bluegill, perch or small bass
Bottled lime juice (plus one sliced lime for garnish)
1 teaspoon Salt
Freshly ground black pepper
½ cup mayonnaise
3 canned chipotle chiles en adobo, plus 1-2 teaspoons of adobo sauce
1 large sweet (Vidalia) onion, about 1 LB, thinly sliced and separated into rings
3 TBS of chopped cilantro
4 12-inch X 18-inch sheets of heavy duty aluminum foil (I doubled it and used 8 sheets)
DIRECTIONS:
Preheat oven to 350° F (175° C).
Divide up the fish between the 4 pieces of aluminum foil, placing the fish 2 inches back from the edge closest to you. Sprinkle each packet with ¾ teaspoon lime juice, ¼ teaspoon salt, and ⅛ teaspoon black pepper.
Blend mayonnaise and chipotle along with the adobo sauce in a blender or small food processor until smooth. Spread the chipotle-mayo on the fish in all 4 packets. Sprinkle the onions over the top and add 3 to 4 sprigs of cilantro.
Fold the aluminum foil over the top of the fish till the edges meet at the bottom. Seal by turning the edge over twice. Seal the sides of the packet in the same fashion. Place on a baking sheet. Repeat the process with the other pieces of fish.
Place in oven and bake for 13 -15 minutes. Test with a fork to make sure it is done. The fish should be flaky and no longer translucent, and onions just cooked through.
Place the packets on individual dinner plates. (I drained the water from each packet). Each person can open their own fragrant packet and garnish with chopped cilantro. Serve with cauliflower rice, a green salad, lime slices and/or guacamole. You can make more of the mayonnaise dressing to accompany it in case anyone wants to add a bit more spice.

![Slip Bobber Fishing for Crispy Italian Fillets
I made potato-crusted fish before with low-carb flakes. It was one of my best recipes ever. But I want to change up a little on that recipe. I found another even more suited to my Italian taste buds. I have all the fixings, ah, ah, ah, except the fish. Let’s catch some bluegill! See the recipes, fishing equipment, and much more below.
Recipe for roasted red pepper salad
Ingredients (this is double what I used in the video):
1 12 ounce jar of roasted red peppers, drained
½ of sweet onion cut to form arches
¼ teaspoon of garlic powder
20 sprigs of Italian parsley, leafy top parts only, rough chopped
2 ounces of shredded Fontinella cheese
Fresh cracked pepper to taste
Salt to taste
Directions:
Mix all ingredients in a medium bowl and let marinate in refrigerator for at least an hour.
Recipe for Crispy Italian Fish Fillets

INGREDIENTS
2 large eggs
⅓ cup heavy cream
1 (inner) pack Carb Counters Instant Mashers by Dixie USA
[if not worried about carbs, 3.75 ounces of potato flakes]
6 tablespoons (⅓ cup) grated Parmesan cheese
2 teaspoons of Italian seasoning
1 pound mild fish fillets like, bluegill, perch, bass, catfish, walleye or crappie
1 stick of butter
½ cup of peanut or vegetable oil (enough to coat the bottom of large skillet)
Salt and pepper
Lemon wedges (optional)
PREPARATION INSTRUCTIONS
Beat eggs and cream in a shallow bowl. In a small glass casserole dish, blend potato flakes, parmesan cheese and Italian seasoning. Rinse fish fillets; pat dry. Season with salt and pepper.
Heat the butter and oil in large frying pan over to between 350 and 375°F. Coat fish fillet with egg mixture, and then into potato flakes, pressing flakes onto fillets to coat well.
Fry fish, about 2 minutes per side, or until golden and fish flakes easily with fork. Do not crowd the skillet. Do the fish in batches if needed. Serve with lemon wedges.
FISHING EQUIPMENT
The red bobber stopper plastic things are believed to be Arnold Tackle Speed Stop Bobber Stops from Bass Pro Shops. Similar ones are sold by Bass Pro Shops. The bobber is a 4½ inch by ½ inch Thill slip bobber which seems to be discontinued.

THE HOOK is a 1/16 ounce lead jig head in chartreuse probably from Bass Pro Shops.
THE ROD is over 20 years old. It is a Shimano Stimula, S150UL2B, Length 5’0” line weight recommended 1-4 lbs. Lure weight 1/16 to 3/16 ounce.
THE REEL is a Shimano 1000, recommended line weights of 2 to 6 pounds. It is over 20 years old and seems to be discontinued.
THE LINE is Sufix 832 braid in low-vis green, 10 pound test, 4 pound monofilament equivalent.

FISH IN THE LAKE:
largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp.
LARGEST FISH CAUGHT FROM THE LAKE: The biggest was a grass carp which I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The largest bass was 6¾ pounds which I caught here at Lake Ketchabigwon. The largest crappie was 14¾ inches, and weighed 2 LBS 1 oz., the largest bluegill was about 10 inches but I did not take measurements. The largest yellow perch was over 12 inches but I do not remember the exact measurement.

LOW-CARB FAKE BRAZILIAN WHITE RICE
INGREDIENTS:
2 TBS of olive oil
1 medium onion, chopped (I used 10 oz. of pre-chopped onions)
3 cloves of garlic, minced (I used 2 tea. of minced garlic from the jar)
20 oz. of fresh riced cauliflower (or 2-10 oz. bags of frozen)
1 teaspoon of salt
DIRECTIONS:
Set your largest skillet to medium-low heat and add the olive oil.
Add onions and sauté for 10 minutes.
Add garlic and sauté another two minutes.
Add fresh or frozen riced cauliflower and salt.
Cook and stir for 8 to 10 minutes until “rice” is soft to your liking.
Cover skillet to more quickly soften the “rice.”
BRAZILIAN FISH STEW (MOQUECA)

INGREDIENTS:
4 tbsp olive oil
1 red onion, sliced into half rings, about ¼ inch thick
1 red bell pepper, seeded and sliced, about ¼ inch wide strips
1 yellow bell pepper, seeded and sliced, about ¼ inch wide strips
1 10-oz. can of Rotel Mexican Lime & Cilantro diced tomatoes
Juice from ½ lime (2 TBS)
1 13.5-oz. can of coconut milk
1 tbsp tomato paste
1 teaspoon salt
¼ to ½ teaspoon of freshly ground black pepper, as you like
1 LB of bluegill fillets (or tilapia or other white fish) cut into bite-size pieces
1 LB of raw shrimp, peeled and deveined
1 tbsp chopped cilantro
DIRECTIONS:
Heat the olive oil in a deep frying pan over medium heat. Add the onion and peppers and cook, stirring frequently, until tender but not browned, about 10 minutes. Add the Rotel tomatoes and lime juice. Reduce the heat to medium-low and simmer, stirring occasionally, for 20 minutes, until the vegetables have softened and released their juices. Keep skillet covered to further soften the vegetables. Stir in the coconut milk and tomato paste and return to a boil. Season with salt and pepper.
Add the fish and shrimp to the coconut milk mixture and cook, stirring occasionally, for 7 minutes, until the fish is opaque throughout and the shrimp is pink. Do not overcook.
