I’ve tried oven-fried fish before but it didn’t come out crispy. I’m determined to do an oven fried recipe that is actually CRISPY! I may have found one. I’ve got all the ingredients, except one. You know what it is. The fish! Let’s see if we can catch some!
See the fishing equipment, lake info and recipes in below.
Cauliflower Rice with Pico de Gallo
[Recipe inspired by the one found here: genaw.com/lowcarb/mexican_rice.html]
10 oz. bag of “Trader Giotto’s” frozen, riced cauliflower (Trader Joe’s)
4 or 5 ounces of slivered or diced onion
3 tablespoons butter, or oil, or a combination
4 or 5 ounces of pre-made pico de gallo from supermarket
⅛ teaspoon garlic powder
¼ teaspoon cumin
In a very large skillet sauté the onion in butter and/or oil until tender.
Stir in the grated cauliflower, then the remaining ingredients. Mix well.
Simmer 10-12 minutes until the cauliflower is tender, stirring occasionally.
Oven Crisp Fish Fillets
Recipe inspired by the one found here: justapinch.com/recipes/main-course/fish/oven-crisp-ocean-perch-fillets.html
Ingredients
1 to 1½ LBS. largemouth bass, bluegill, perch, (or mild, white fish of your choice)
2 large eggs, room temperature
2 Tbsp lemon juice
2 cups low-carb bread crumbs
1½ tsp dill weed
½ tsp kosher salt
1½ tsp white pepper
1 TB. garlic powder
1 TB paprika
1 TB Old Bay seasoning
Directions
Preheat oven to 400 degrees F.
In a small bowl add eggs salt, pepper & lemon juice, then beat till blended together.
In a large zip lock bag or bowl, add the panko bread crumbs, paprika, old bay seasoning, dill & garlic powder, shake or stir to blend together.
Add a wire baking rack to a baking pan, lined with foil, then spray with non stick cooking spray.
Dip fish into egg batter then coat both sides of fish with low-carb bread crumbs mixture. Place on prepared wire rack, leaving a little space between each piece for even heat distribution. Spray lightly with non stick cooking spray.
Bake in preheated 400 degree F. oven for 10 minutes or until fish flakes easily with fork. Serve with lemon wedge & tartar or Hot Sauce as desired.
FISHING EQUIPMENT:
LURE: 2.75 inch TRD (The Real Deal) from Z-Man Fishing Products, color, “new money;” see here: zmanfishing.com/store/categories/elaztech/finesse_TRD on a Gopher 1/16 ounce Mushroom Head Jig, found here: gophertackle.com/mushroomjig.html
REEL: The spinning reel is a Pflueger Trion GX-5. This model is no longer made.
SPINNING ROD: The spinning rod is a Daiwa SMC401ULFS Spinmatic-C SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Amazon, Fish USA, and other places.
FISHING LINE: The spinning reel line is SpiderWire, Ultracast, Invisi-Braid in 10 pound test, 2 pound monofilament equivalent.
TH BOAT: The boat is a Bass Hunter I ordered from Bass Pro Shops about 12 years ago. They no longer sell it. Also, this model is no longer available, but newer models like it are still sold. Check here: sportsmansguide.com/product/index/bass-hunter-ex-96-boat?a=670576&pm2d=CSE-SPG-15-PLA&utm_medium=PLA&utm_source=Google&utm_campaign=CI&ci_src=17588969&ci_sku=WX2*0186929000000&gclid=COz4v7CNocsCFQmQaQod_-EG4g
THE LAKE:
The lake is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE: largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp
WHY KEEP SMALL BASS:
We had biologists come out and do an electroshock survey of the lake. They found too many small, stunted bass. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.
WHY I DON’T FISH FOR CATFISH
Yes, there are channel catfish in the lake but I’m not knowledgable about how to fish for them. Rigging for them is confusing to me. Also, I don’t enjoy sitting and waiting for a bite. It seems boring.
LARGEST FISH CAUGHT: The biggest was a grass carp I hooked and managed to beach. It weighed over 30 pounds. Next was a channel cat (accidentally caught while bass fishing) of 10 pounds. The largest crappie was 14¾ inches and weighed 2 LBS and 1 oz. I did not measure the largest bluegill, but it had to be at least 10 inches. Finally, my largest bass was 6¾ pounds caught here at Lake Ketchabigwon.
VIDEOGRAPHY: The principal camera is my iPhone 6s Plus on a tripod. I also use an iPhone 5s as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on my MacBook Pro using Final Cut Pro X.

![Slip Bobber Fishing for Crispy Italian Fillets
I made potato-crusted fish before with low-carb flakes. It was one of my best recipes ever. But I want to change up a little on that recipe. I found another even more suited to my Italian taste buds. I have all the fixings, ah, ah, ah, except the fish. Let’s catch some bluegill! See the recipes, fishing equipment, and much more below.
Recipe for roasted red pepper salad

½ of sweet onion cut to form arches
¼ teaspoon of garlic powder
20 sprigs of Italian parsley, leafy top parts only, rough chopped
2 ounces of shredded Fontinella cheese
Fresh cracked pepper to taste
Salt to taste
Directions:
Mix all ingredients in a medium bowl and let marinate in refrigerator for at least an hour.
