You have seen the viral sweet potato omelette all over the internet and I had to try it my way. This version is packed with 50g of protein, comes in around 430 calories, and it is honestly one of the most satisfying meals I have made in a long time. Whether you are eating this for breakfast, lunch, or meal prep, this one is a keeper.
🍠 The Recipe
Ingredients:
∙ Grated sweet potato, enough to cover the bottom of your pan
∙ 2 to 4 oz of meat of choice (I used homemade chicken Italian sausage)
∙ 2 large eggs
∙ 2 large egg whites
∙ Cheese, optional
Instructions:
1. Grate your sweet potato
2. Spray your pan with coconut oil spray and line it with the grated sweet potato. Cover and cook for 5 minutes
3. Add your eggs over the sweet potato and place your meat and toppings on one side. Cover and cook for 3 minutes
4. Fold the omelette in half, turn off the heat, replace the lid, and let it finish cooking through for a few more minutes
5. Enjoy every single bite!
