The Caribbean Islands are full of exotic, invasive species and this week we’re traditional bowhunting iguanas and feral goats in the jungles of St. Croix. We start off chasing goats with the longbows but the wind gives us away. But when we get back to the cabanas, an unexpected guest shows up for dinner! I’m not usually one to say things taste like chicken, but I do have to admit, iguana does! This big gal had a bunch of eggs in here so we deep fried them along with the meat and they were fantastic!
