Detecting gristle, bone fragments and other foreign bodies in meat has long been one of the hardest quality checks in food processing. IRIS, a Spanish European Digital Innovation Hub, brought hyperspectral imaging to the production line to solve it.
By analysing the unique light signatures of materials in real time, the system flags contaminants that conventional inspection methods routinely miss. The result is safer food on European plates, fewer recalls for producers, and a clear demonstration of how advanced imaging technology can lift quality standards across an entire sector.
This success story is one of five shortlisted for the EDIH Community Award at the EDIH Summit 2026.
