A MONSTER cheese experience - not for the faint hearted! The very best grilled cheese with an awesome cheese pull! Cheddar, Gouda and Mozzarella wedged between 2 ultra soft slices of Hokkaido milk bread (with a little mayo and mustard), and grilled on a cast iron pan.

For me it beats the toasted cheese sandwich and the cheese on toast (with Lea & Perrins Worcestershire sauce) that I had growing up in the UK.
You can use the classic American (fake) Cheese which I love for many different reasons. Or experiment with your own mix. It’s best to use a “young” cheese as it will melt well. Don’t go for anything mature, or too fancy, save that for a classic mature cheddar and ham sandwich. The cheese sold in long square blocks should generally work well.
