This method for clarifying orgeat is simple and consistent, and in more than a dozen attempts, it has worked every time. While I use a magnetic stirrer for this (amzn.to/4bRSDGs), it is not necessary to get *clear* almond milk, but it is if you want flavorful almond milk. In my experience, blenders are too intense for this method, but there may be a workaround that I just haven't tried yet. A stand mixer, milk frother, or even just a whisk so long as you make sure to keep things moving for a very long time.

This recipe does not call for an exact amount of sugar to add to your almond milk because the yield of the almond milk after filtering depends on several factors, and you shouldn't expect yours to be the same as mine or even the same from each batch. So get a scale and measure your sugar based on the almond milk yield.
*Ingredients*
300 ml of water
3 tbsp JOI almond concentrate or any other nut butter
Citric acid (amzn.to/4qNLVWJ)
Sugar
Almond Extract
Rose Water
Orange Blossom water
*Process*
Heat 300 ml of water to 140 F (close is good enough). Add 3 tbsp JOI and stir for 30 minutes. I use a magnetic stirrer and drop in JOI slowly. After 30 min, you can pre-strain through a nut milk bag to get the large particles and this will help speed up the coffee filter step later. BUT, the big downside is the bag absorbs quite a bit of milk, reducing your yield, so I skip this step most of the time.
*Flocculation or βCurdlingβ*
Re-warm almond milk to 140 F (close is good enough). Dissolve 0.2g citric acid in 1 tbsp water OR 0.5 ml of my 1% Acid Solution (youtu.be/dcw6IJSice4?si=1kHl7LY7sljV4fCa)in 1 tbsp water. Add in citric acid solution and stir gently. _You may need to get a 200g scale for this (amzn.to/49M4KDF)_
*Settling*
Transfer to a covered container and refrigerate at least 4 hours (overnight preferred). You should see the solids sink to the bottom and a layer of oil appear (flavor).
*Filter*
Carefully filter through a coffee filter. I use a Chemex or V60, but other paper filter methods should work as well. This process can take a few hours, but it should not clog your filter.
_Fun tip: taste the spent almond concentrate or nut butter against the unused concentrate or nut butter. You should find that what you have filtered out to be completely bland and flavorless, proving how well the extraction has worked._
*Make Orgeat Syrup*
Weigh clarified almond milk. Add 2x that amount in sugar. You can blend or add to the stove top to dissolve. Add 1/4 tsp almond extract, 1/4 tsp rose water, and 1/4 tsp orange blossom water per 100 g finished syrup.
Alternatively, for a more almond milk flavored syrup you can make this a 1:1 with 1 part almond milk to 1 part sugar and reduce the aromatics.
