Scones are a great breakfast bread and are versatile with added fruit, and nuts. Apricots have just the right amount of sweetness without being overpowering, the bonus is they are good for you. This is a simple, quick, and easy recipe ideal for a beginning baker. They do have dairy but no eggs so they are great for someone with an egg allergy.
2 cups all-purpose Flour
1/3 Cups Sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter cut into small chunks
2/3 cup dried Apricots chopped into small pieces
2/3-3/4 cup milk
Topping
2 tbsp Apricot preserves stir in 2 tbsp hot water.
Turbinado sugar
Preheat the oven to 400*. Whisk together dry ingredients, cut the butter in with a pastry cutter until it resembles peas. Stir in the milk until it is mixed well, add fruit last stir all together. Sprinkle flour over your countertop, knead the dough 4 or 5 times in the bowl, make it into a circle, and put in the flour flip over once, pat out into a circle about 7" and use a bench knife to cut into 8 slices. Brush with a little milk and spread preserves over the top and sprinkle with turbinado sugar. Bake for 15-20 minutes until light brown.
