The Cookbook that I used for this review is Taste of Home, Annual Recipes, 1997. The recipes are a collection from the previous year. What I really like is this cookbook has 528 recipes and many pictures. There are categories and it is so easy to find what you are looking for, each one is from a real person and it has their name and where they are from. This recipe is a little time-consuming and needs to be made ahead of time. I made some minor adjustments and I will put those in the directions. So let's get baking.
Crust ( I used a homemade crust and sprinkled turbinado sugar around the edges.)
1-1/3 cup vanilla wafer crumbs
2 tsp. sugar
5 tbsp of butter melted
1/2 tsp. Vanilla extract
Filling
1/4 cup sugar
3 tbs. all-purpose flour
pinch of salt
1 cup half and half
3 egg yolks beaten
3 tbsp. butter melted
1 tsp. vanilla
1 tbsp. confectioners sugar
Topping
5 cups fresh blueberries, divided (I used frozen)
2/3 cup sugar
1 tbsp. cornstarch (I used 2 tbsp cornstarch)
Store in the refrigerator. 6-8 servings.
