Chicken wings with yellow bean sauce
I have been asked about yellow bean sauce dish with cashew nuts a few times; so this is my recipe for chicken yellow bean sauce.
I am using chicken wings for this dish; you guys can use chicken breast if you want to…in fact I might cook a version with chicken breast.
Yellow bean sauce is very salty; it is similar to hoi sin sauce; whereas hoi sin is sweeter. Therefore I will not be using salt or any soy sauce to cook this dish.
Below is my recipe for you guys to try at home…enjoy
Ingredients:
3 large chicken wings (chopped into small pieces)
2 cloves fresh garlic
2 stalks spring onions
30g onion (sliced)
30g carrots
Handful fried cashew nuts (or peanuts)
2 dried chillies
2 tablespoons yellow bean sauce
1 tablespoon sugar
Dash of cooking wine
Dash of white pepper powder
Chop the chicken wings into 2/3 piece and blanch in boiling water for 2 minutes, drain and set aside.
Heat wok with fair amount of vegetable cooking oil and fry the chicken wings in medium/low heat for about 8 minutes, stir very now and again to ensure they are fully cooked.
Set the chicken wings aside; clean and heat wok with some vegetable cooking oil.
Add the vegetables (except the spring onions), dried chilli and chicken wings in the wok. Turn heat to high and add a dash of cooking wine and white pepper powder.
Add the yellow bean sauce and stir fry for a minute to complete the dish.
