With 2018 College Football Season kicked off, we decided to do some tailgating finger food. Wings, Pulled Pork stuffed Jalapeno Poppers, and Charleston Cheese Dip. It all turned out very good.

Charleston Cheese Dip Recipe
1 pkg cream cheese (softened)
1/2 cup Hellman's Mayo
1 cup sharp shredded cheese
1/2 cup shredded monterey jack cheese
4 green onions finely chopped
1/8 tsp cayenne pepper
10 crushed ritz crackers
8 strips of cooked chopped bacon
1 chopped jalepeno pepper (if what more spice)
Directions:
Preheat oven to 350 degrees F
In medium bowl, mix the mayo, cream cheese, cheddar cheese, monterey jack cheese, green onions and cayenne pepper.
Transfer the mixture to a shallow baking dish and spread out to cover the bottom.
Top with crackers/crumbs
Bake until heated through-about 15 minutes
Remove from oven and top with bacon.
Serve and dip with crackers, Frito scoops, or bagel chips.
Pepper Stuffing
1 Pkg cream cheese
1/2 pint of pulled pork (leftover from the freezer)
1/2 cup of sharp chedder cheese
1 tsp It's Incredible rub by Heaven Made Products(substi w/salt/pepper/garlic
1 tsp of Amazin Cajun rub by Heaven Made Products(subst with Tony Chatteries cajun rub)
BBQ sauce used on wings
1 cup of Richards BBQ sauce (or other favorite vinegar base sauce)
1 cup of Texas Pete Hot Sauce (or other favorite hot sauce)
1/2 cup of honey
1/2 cup of sweet chili sauce
1 tsp Amazin Cajun rub made by Heaven Made Products
