These pumpkin whoopie pies are SO GOOD!! Let me know if you try them.
Ingredients
3 C Flour
2 Tbsp. Pumpkin Pie Spice
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 C sugar
1 C brown sugar
3 C canned Pumpkin
1 C Oil
1 tsp. Vanilla
6-7 C Powdered Sugar
1 8 oz. package Cream Cheese, room temperature
1 stick (8 tbsp.) Butter, room temperature
1 Tbsp. Vanilla
1/2 C Marshmallow cream
pinch of salt
Preheat oven to 350°.
Line two baking sheets with parchment paper.
Combine all dry ingredients, flour, pumpkin pie spice, baking soda, baking powder, and salt, and set aside.
Beat the sugar and eggs together until light in color. (3-4 minutes) Add pumpkin, oil, and vanilla. Combine and then add in dry ingredients. Mix until just combined. Scoop out even sized cookies, you are wanting to have an even amount in the end. I use a cookie scoop to make sure they are all the same size. Bake for 10-12 minutes. Allow to cool on the pan for 5 minutes and then transfer to a cooling rack. Continue until all cookies are baked and cooled.
To make the filling: Beat the butter and cream cheese until smooth. Add in powdered sugar, marshmallow cream, vanilla, and salt. Beat for several minutes until a smooth frosting is formed.
Once cookies are cool match them up and fill.
