Under the surface of Bangkok's Chinatown, there's a battle that's been simmering for generations- families and neighbors split by their allegiance to their favorite Hoi Tod shop- the Thai-Chinese Oyster Omelet.
As far as feuds go, it's fairly harmless, but diving into the rivalry begins to unveil a much longer story- one involving wars between the Dutch and the Taiwanese, and China's Qing and Ming Dynasties. It's a story that tells of drought and famine, religious mythology and the settling of modern Bangkok.
It's one of the most far-reaching stories we've ever told on OTR. It's also the most oysters we've ever eaten in a single day. Seriously...so many oysters.

![Huay Khwang, and Chinese-Thai Food Past, Present, and Future with @ChineseCookingDemystified
With help from Steph and Chris from Chinese Cooking Demystified, we visited Huay Khwang, a neighborhood in North Bangkok thats a Mandarin-speaking, baijiu-pounding, incredible-food-eating enclave of immigrants from China. Despite the hype around Yarowat, better known as Chinatown, its actually here that- for the first time since leaving- brought me back to the eleven years I spent living, cooking, and most of all, eating in China.
In this video, we rediscover old favorites like Lanzhou Noodles and Malatang, try to understand the rise-and-fall of immigrant communities, and explore the next phase of migration to Huay Khwang through an all-time feast at a restaurant run by members of the Wa Ethnic Group.

![Khao Yam and Nasi Kerabu: Two Names, Two Countries, One Perfect Dish
Khao Yam might look like a salad, but its so much more. Mixing coconut, lemongrass, chili, fermented fish, and rice with an endless variety of fresh herbs, fruits, and vegetables, it all combines into nothing less than a bite of Southeast Asia.
Its no wonder that this dish is the pride of its home region. The problem is, for more than a hundred years, that region has been split in two by international borders, and both sides claim the dish- known as Khao Yam or Nasi Kerabu- as their own. Its even erupted into violence, with this dish serving as a symbol of identity- but whose identity?

![Thailands First Bodybuilding Celebrity and the Last Cart of Egg Noodle Alley
More than 80 years ago, a wave of immigrants arrived in Bangkok from Guangzhou, China, escaping a city bombarded by the Japanese. Theyd cluster together in a small neighborhood in Sathorn District, which would quickly earn the nickname Egg Noodle Alley. For a time, their specialty could be found on bicycle carts all across Bangkok, but by now, Egg Noodle Alley, and the ancient techniques the families used to make the dish, are all but forgotten.
But one street cart still survives. And the reason its still standing is one of the wildest stories weve ever covered.
Its a story of old recipes, a changing metropolis, and one mans obsessive quest to become a champion in a sport called bodybuilding- a quest that would, by accident, save the family business.
