This Method will work EXACTLY as shown on PS2, Xbox, PC, Mobile, and Definitive Edition since all of these Platforms/Versions allow the Method shown in the Video. With that said, it's only really interesting for PS2, Xbox, and PC Players now a days considering you can obtain the AP Leviathan on Mobile and Definitive Edition without OM0 and using the Flight School Setup Menu Method.
This Method is a bit easier than the old Method because you no longer have to deal with the Wreck of the Leviathan in the San Fierro Impound. By jumping out of the Leviathan when it's high above the dam will allow it to be destroyed and retain the DP Property.
You absolutely NEED a Minigun before beginning this quest and you also will need some kind of other Weapon like an SMG, AK-47, or M4, but the AK-47 or M4 is likely the best option. The Minigun is used to specifically take down FOUR out of FIVE total Black Maverick's that show up during the Mission while you damage the other one (it'll be the THIRD or FOURTH Maverick in the sequence that this can happen with) just enough that it flies away for a while giving you enough time to deal with the Leviathan.
Note that I've seen other people on different Platforms and Versions of the game fly the Leviathan to Boat School and enter/exit Boat School in order to auto-impound the Leviathan to the San Fierro Impound. For whatever reason, this DOES NOT WORK for me. The Leviathan is always still there after the fact. I also tried auto-impounding to the San Fierro Impound using Driving School. While my Leviathan always vanished when I would enter/exit the School, it would never be seen inside of the San Fierro Impound afterward!
You can fly it all the way to Los Santos and use the Broadway to auto-impound the Leviathan to the Los Santos Impound, but I am almost certain it can NEVER be taken out of there like it CAN the San Fierro and Las Venturas Impounds by using a Towtruck. In my opinion, what I show in the Video is your best option. Use the Emerald Isle Car Park in Las Venturas to auto-impound the Leviathan to the Las Venturas Impound.
The DP Leviathan will require a Towtruck to be used in order to take it out of the San Fierro or Las Venturas Impound after the fact at which time you can fly it over to the Hanger and store it inside of there for the remainder of the game. It's also possible to leave it in the San Fierro or Las Venturas Impound, too, but it could still be deleted if you're not careful or know what you're doing!
