This Method will work EXACTLY as shown on PS2, Xbox, PC, Mobile, and Definitive Edition since all of these Platforms/Versions allow the Method shown in the Video.
Don't think your clever and think you can just park the EC2 Vincent in the Garage, carry on with the Mission and pass it, then check the Garage afterward. It won't be there, ever. It's scripted to vanish after passing the Mission, at all times. It's only possible with Mission Failure.
If you plan to obtain the EC/EC2 Vincent from the Casino Debt Call, you can completely disregard this EC2 Vincent from Home Coming because it's technically INFERIOR. The EC/EC2 Vincent will have a Secondary Color of Black, just like this EC2 Vincent, only it will ALSO have a Primary Color that is special, too, thus SUPERIOR to an EC2 Black Vincent from this Mission!
The EC2 on this Vincent can not be seen in-game and can only be seen when viewing your Save File under a Save Editor. Visually in-game, it will look like any ordinary Vincent.
I am recording this Video on PCSX2 Version 1.6.0. Game Version is SLUS-20946 (Version 1.03) of GTA San Andreas for PS2.
