Ground Beef with Zucchini in the Stack Cooker

1.5 lbs lean ground beef
1/2 medium onion, diced
2 garlic cloves, crushed
1 tomato, diced
2 zucchini's, cut in 1" spears
4 oz sliced button/cremini mushrooms
2 teaspoons garlic salt
1-2 teaspoons Trader Joe's Umami Seasoning
1 Tablespoon Soy sauce
1 teaspoon sesame oil
In the 3 quart stack cooker casserole place all the vegetables and season with umami seasoning and pepper. I added the soy sauce and sesame oil at the end but you can add it in now.
In the 1-3/4 quart colander section, place the ground beef, top with the onion and garlic. Season with garlic salt and pepper. Break the meat up so it's not one big clumb. Stack the colander on the 1-3/4 qt casserole. Then stack this whole thing on top of the veggies. It will sit on the veggies but its ok.
Cover and cook for 10 - 15 minutes.
Check the meat and stir it up. It should be fully cooked. Stirring will help break the meat up some more and also help drain any excess gristle. Set aside. Stir the veggies. There will be some liquid at the bottom from the veggies and that's perfect!
After the beef has drained of gristle, mix with the cooked veggies. Allow to rest for a few minutes as it will continue to cook. I put mine back in for 5 mins and it didn't really need it. Done!
**Cook times will vary based on microwave wattage. I use a 1,000 watt microwave.**
