A chilled Spanish classic ready in minutes! Who doesn't like a chilled savoury drink on a hot summer's day. Gazpacho is actually a cold vegetable or tomato soup from Spain, born in the sunny south where the days get hot and the veggies are ripe and full of flavour. It started as a simple peasant dish to stay cool, using up fresh summer produce. The taste is bright, fresh, and zingy thanks to raw garlic, vinegar and juicy tomatoes. You can sip it in a glass but traditionally it's eaten as a cold soup. There’s no cooking involved, just blend and chill, so the flavours stay bold and raw.
