COTTAGE CHEESE BROWNIE RECIPE
1 cup low-fat cottage cheese
2 large eggs
1 teaspoon vanilla extract
1/4 cup peanut butter runny/soft
1/2 cup (heaping) unsweetened cocoa powder
2/3 cup almond flour
1/2 cup coconut sugar
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
Bloomed espresso (flavor boost â optional):
1-2 teaspoons instant espresso powder
1-2 teaspoons very hot water
Foldâins:
1/2 cup mini Lilyâs chocolate chips (plus 3 tablespoons) for topping
Instructions
INSTRUCTIONS:
Heat oven to 350°F. Line an 8Ă8âinch pan with parchment, leaving slight overhang.
In a small dish, stir espresso powder into very hot water until dissolved (you want a thick slurry, not watery). Set aside to cool slightly.
Add cottage cheese, eggs, vanilla, peanut butter, and the cooled espresso slurry to a blender or food processor. Blend on high just until completely smooth and creamy, with no visible cottage cheese curdsâthink of a thick, chocolateâfree pudding in texture. Do not overblend.
In a medium bowl, whisk cocoa, almond flour, coconut sugar, baking powder, and salt until there are few to no clumps of cocoa or sugar, and everything is evenly combined.
Pour the smooth cottage cheese mixture into the dry ingredients. Stir with a spatula just until you have a thick, glossy batter with no dry pockets.
Fold in 1/2 cup mini chocolate chips. Spread the batter evenly into the prepared pan and smooth the top, then sprinkle the remaining mini chips over the top.
Bake for 20-25 minutes. Edges should look set and slightly pulled from the sides. The center might still look a bit soft and may have a very slight wobble. A toothpick inserted 1â2 inches from the edge should come out with moist, fudgy crumbs, not wet batter, and not clean. If it still looks very wet in the center at 16 minutes, give it another 2â3 minutes and check again.
Eat warm or let brownies cool completely in the pan on a wire rack.
NOTES
For maximum fudginess, cover and chill at least 1â2 hours (or overnight). The texture should firm up but stay soft and gooey in the center.
Use the parchment to lift out and cut into 9 squares.

EGG WHITE FRITTATA RECIPE:
2 cups liquid egg whitesÂ
3/4 cup lowâfat cottage cheese 2% ½ for blending in and Âź for dolloping
1/2 cup red onion, finely diced
3/4 cup red bell pepper diced
2 cups fresh baby spinach, roughly torn, 1/4 cup feta cheese, crumbled
1Â teaspoon olive oilÂ
3/4 teaspoon garlic powder
ž teaspoon dried Italian seasoning
½ teaspoon fine kosher salt to taste
Freshly ground black pepper
1/4â1/2 teaspoon red pepper flakes optional
Cooking spray
Heat oven to 350°F and generously grease a 9Ă9âinch baking dish with cooking spray or a light film of oil, coating the sides and corners well.
Heat the olive oil in a large nonstick skillet over medium heat. Add red onion and a pinch of salt; cook 3â4 minutes, until softened.
Add bell peppers and cook 2â3 minutes, until just starting to soften and release a bit of juice. Add the spinach and cook 1â2 minutes, just until wilted.
Transfer the vegetable mixture to the greased baking dish and spread in an even layer.
In a blender, add egg whites, ½ cup cottage cheese, salt, pepper, garlic powder, and Italian seasoning. Blend until incorporated - try to do this quickly to avoid creating a lot of excess foam on top of the mixture.
Pour the egg mixture evenly over the vegetables in the baking dish, then gently nudge them with a spatula to distribute them evenly.
Spoon small dollops of the remaining Âź cup cottage cheese over the top, and then sprinkle feta and a pinch of red pepper flakes evenly over everything.
Bake at 350°F for about 35-45 minutes, until the frittata is puffed, the edges are lightly golden, and the center has just a slight jiggle when you gently shake the pan. A knife or toothpick inserted in the center should come out without liquid egg (moist is fine, not runny).
Let the frittata cool to room temperature; it will deflate slightly and finish setting, which makes slicing easier.
Slice into 4 squares and serve with your favorite condiments and some fresh fruit on the side!
