It's almost Christmas y'all!! π²π²ππ. I am bringing you my pot roast recipe. It's perfect for Christmas dinner. It does take some time so be sure to plan ahead. You can use any type of roast but I like the rounder ones (like rump). You still have time to get your ingredients so give this a try and let me know how it turns out. If you don't have a cast iron pot like mine, then brown it in any pan then transfer to a roasting pan covered with foil. Enjoy and Merry Christmas.
5lbs rump roast (Chuck or any other roast)
2-3 Tbsp of salt
2 Tbsp of black pepper
1 large onion
6 or more garlic cloves (to your liking)
4 stalks celery
4-5 carrots (don't peel)
5-6 sprigs each of fresh rosemary and thyme
4 bay leaves
1.5 boxes of chicken broth (32oz boxes) 6 cups or as much as needed to cover roast
1.5 cups good dry red wine
