Extra Dark Chocolate Chip Cookie Bars
(For a 12” Camp Oven)
Ingredients:
1 cup whole-wheat flour
¾ cup almond flour (can substitute ap-flour)
½ cup unsweetened cocoa
1½ tbsp. instant coffee (can substitute finely ground coffee)
1½ tsp. ground cinnamon
1 tsp. baking soda
½ tsp. kosher salt
3 large eggs, lightly beaten
1 ripe banana, peeled & mashed
½ cup plain greek yogurt
1/3 cup honey
1 tbsp. canola oil
2 tsp. pure vanilla extract
1½ cup blueberries
¾ cup extra dark chocolate chips
Directions:
1. Using a large bowl, mix together both flours, cocoa, coffee, cinnamon, baking soda and salt. Set aside.
2. Using a medium bowl, stir together eggs, banana, yogurt, oil and vanilla. Set aside.
3. Stir wet ingredients into dry ingredients, stirring gently until lightly blended together. Add in blueberries and chocolate chips, fold in easily to not over mix.
4. Grease inside of oven or place a circular cut piece of parchment paper inside the oven. Light 25 briquettes. Place 8 briquettes under oven in a loose inner ring and 17 briquettes on lid. (12 in a loose outer ring, 5 in a loose inner ring. Preheat oven to 350°F.
5. Place batter inside oven, using two spoons, spreading it quickly and evenly.
6. Quickly place preheated lid back onto oven and bake for 14-15 minutes, or until edges are firm. Remove from heat source and let cool inside the oven for a few minutes before lifting out of oven, by grasping parchment paper.
7. Place on a wire rack to cool before slicing. Enjoy the extra dark richness!!! Goes great with a cup of coffee!!!
