Banana Nut Bread
(For a 12” Camp Oven & 9” Loaf Pan)
Ingredients:
Dry Mixture
2 cups bread flour
1 tbsp. baking powder
1 tsp. baking soda
½ tsp. salt
Wet Mixture
2 cups ripe bananas, mashed
½ cup butter, softened
¾ cup sugar
2 large eggs
1 tsp. vanilla
½ cup chopped walnuts (added after both mixtures are combined)
Directions:
1. In a medium sized bowl, whisk the dry ingredients together. Set aside.
2. Using a large bowl, mash 3-4 ripe large bananas. Set aside.
3. In a separate large bowl, mix the butter, sugar and vanilla together until creamy. Beat in the eggs one at a time. Blend in the mashed bananas until fully combined.
4. Gradually add the dry mixture into the wet mixture, stirring in as you go. Continue stirring batter until smooth. Fold in the chopped walnuts.
5. Pour batter into a well greased loaf pan. Place loaf pan into 400°F preheated Camp Oven. (9 briquettes under the oven, 19 Briquettes on oven lid. (28 total)
Bake for 30 minutes, then do a coal change. Continue baking for 20-25 minutes. (50-55 minutes total)
6. Insert a toothpick to check doneness. (Toothpick should come out clean)
7. Remove loaf pan from oven and place on wire rack to cool for at least 10 minutes. Carefully remove loaf from pan and allow to cool completely on wire rack before slicing. ENJOY!!!
