A yeast Derivative is a yeast product resulting from a process in which the yeast has been inactivated or autolysis has been carried out. There are two applications of yeast derivatives in winemaking. The first one is an aid to fermentation which improves the fermentation performance of the process for compensating for sluggish fermentations. and the second application improved the visual and aromatic appearance of the product.

E2U™ is a groundbreaking step taken by Fermentis in the world of yeasts and yeast derivatives for beverages. You can focus on creating the finest fermented beverages for your customers with E2U™ yeast derivatives.

Yeast derivatives are well known for their benefits in animal and human nutrition and are mainly used to help balance the intestinal microflora and help stimulate the host's natural defenses. Using active dry yeast has become the preferred method for winemakers to get consistent fermentation and flavor complexity in their wines from batch to batch, negating much of the inherent risk of going with natural or spontaneous fermentation. Natural fermentation brings a high degree of unpredictability regarding starting times and stuck or sluggish fermentation cycles that can affect and diminish the quality, flavor, and aroma of the wine.
