Today we're making Chicken Parmigiana for the first time of course. This is a chill cooking livestream talking food, technique, stories, and whatever else comes up. Whether you're here to learn, or just vibe with some real-time cooking, you're in the right place.
We’ll be butchering a whole chicken, simmering a homemade marinara, breading and frying cutlets, layering with mozzarella and Parmesan, and finishing it all in the oven until golden and bubbly. Plus, we’ll keep it fresh with a simple lemon + EVOO salad on the side.

🍎 Ingredients (subject to change live)
Chicken Parm
• 1 whole chicken (break down, use breasts for this dish)
• Diamon kosher salt & black pepper
• 1 cup all-purpose flour
• 2 large eggs
• 1 cup breadcrumbs (Italian seasoned, or plain + herbs)
• ½ cup grated Parmesan cheese (for breadcrumb mix)
• Avocado oil for frying
• About 8 oz. mozzarella (that will come nowhere close to the quality of Italy)
• ½ cup grated Parmesan or Pecorino Romano (for topping)
• Fresh cute basil leaves (garnish)
Marinara Sauce
• 2 Tbsp. olive oil
• 3–4 cloves garlic, thinly sliced
• 1 (28 oz) can whole peeled tomatoes (San Marzano if possible)
• 1 tsp. Diamond kosher salt (adjust to taste)
• ½ tsp. sugar (optional, balances acidity)
• ½ tsp. red pepper flakes (optional)
• 1 tsp. dried oregano
• 3–4 fresh basil leaves (torn in at the end)
🫕 Equipment
• 2 cutting boards (one for raw chicken, one for vegetables/garlic/salad)
• Chef’s knife + boning knife (for butchering chicken)
• Meat mallet or heavy skillet (for pounding breasts)
• 3 shallow bowls/plates (for dredging: flour, egg, breadcrumbs)
• Large skillet (for frying cutlets)
• Tongs or spatula (for handling chicken)
• Paper towels + plate (for draining fried cutlets)
• Saucepan (for marinara)
• Baking dish (9x13, oven-safe)
• Oven + broiler
• Mixing bowl (for salad greens)
• Whisk or small jar (for lemon/EVOO dressing)
• Grater (for Parmesan)
• Wooden spoon (for stirring sauce)
