🍎 Ingredients (subject to change live)
Filling
• 1 lb. / 450 g. ground beef
• 1 medium onion, finely chopped
• 2 carrots, diced small
• 2 celery stalks, diced small
• 2–3 garlic cloves, minced
• 2 Tbsp. tomato paste
• 1 cup beef stock
• 1 Tbsp. Worcestershire sauce
• 1 tsp. fresh thyme (or ½ tsp dried)
• 1 tsp. rosemary
• 1 cup frozen peas
• 2 Tbsp. olive oil or butter
• Salt + black pepper, to taste
Rough Puff Pastry
• 2 ⅓ cups / 325 g. all-purpose flour
• ½ tsp. salt
• 7 oz (200 g) very cold butter, grated or cubed
• 7–8 Tbsp. ice water
• 1 egg, beaten oh so good
🫕 Equipment
• Medium cast iron skillet
• Knife + cutting board
• Wooden spoon/spatula
• Mixing bowl
• Cheese grater
• Fork or pastry cutter
• Rolling pin + lightly floured surface
• Plastic wrap
• Pastry brush
• Oven, preheated to 400°F / 200°C
