This is my recipe for Chicken Paprikash. I love to add peppers to mine, but you can leave them out for a classic version.
Ingredients:
2 and 1/2 to 4 pounds chicken pieces
salt
pepper
1 Tablespoon vegetable oil
3 Tablespoons butter
2 Anaheim or Hungarian Chilies
2 Red Bell Peppers
1 large onion sliced
1/4 cup vermouth (optional)
3 rough chopped garlic cloves
2 Tablespoons all purpose flour
1/4 cup Hungarian Sweet Paprika
1 large tomato or 1 cup tomato sauce (optional)
1 cup chicken broth
3/4 cup sour cream mixed with 1 Tablespoon flour
Warm your pot over medium heat, add your vegetable oil, butter and chicken.
Brown your chicken 5 minutes on each side, then remove.
Add your peppers, chilies and onion, cook till soft.
Add 1/4 cup vermouth to deglaze pan.
Add your garlic and cook 2 minutes.
Add your flour and paprika and cook 1 and 1/2 minutes.
Add your tomato and chicken broth and mix.
Add your chicken back, cover the pot and simmer for 25 to 35 minutes.
Remove you chicken, then add your sour cream.
Noodles:
12 ounces egg noodles
1/2 stick butter (2 ounces)
Parsley, fresh or dried
salt
Boil your noodles 2 minutes less than directions on package.
Drain and return to your pot and add your parsley.
Add your butter and put pot back over low heat.
This will cook your noodles all the way allowing them to absorb some butter.
Taste for salt, then serve your noodles.
