All the flavours of your favourite chaat, but on a perfectly crisp toast. Teekhi chutney, khatti-meethi chutney, onions, capsicum, and potatoes come together to make a flavour-packed filling that's loaded onto bread pan-toasted until golden and crisp.

Full written recipe - Chatpata Aloo Toast

Prep Time: 15-20 minutes
Cooking Time: 20-25 minutes
Serving: 4 toasts

Green Chutney

Ingredients:
FRESH CORIANDER | हरा धनिया 1 CUP
MINT | पुदीना 1/2 CUP
GINGER | अदरक 1 INCH
GARLIC | लहसुन 3–4 CLOVES
GREEN CHILLI | हरी मिर्च 6 NOS.
BLACK SALT | काला नमक A LARGE PINCH
CHAAT MASALA | चाट मसाला A LARGE PINCH
SALT | नमक A PINCH
ICE CUBE | बर्फ 1–2 NOS.
WATER | पानी AS REQUIRED

Method:
To make the green chutney, add fresh coriander, mint, ginger, garlic, green chillies, black salt, chaat masala, salt, ice cubes, and a little water to a blender. Grind into a fine, smooth chutney.
Taste and adjust salt if required and your perfect, spicy and fresh Spicy Green Chutney is ready, set it aside.

Meethi Chutney

Ingredients:
TAMARIND | इमली 30 GRAMS (DESEEDED)
DATES | खजूर 125 GRAMS (DESEEDED)
WATER | पानी 500 ML
JAGGERY | गुड़ 350 GRAMS
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1/2 TBSP
CUMIN POWDER | जीरा पाउडर 1/2 TBSP
GINGER POWDER | सोंठ 1/4 TSP
BLACK SALT | काला नमक 1/2 TSP
BLACK PEPPER POWDER | काली मिर्च पाउडर A PINCH
SALT | नमक 1/2 TSP

Method:
Add tamarind, dates, and water to a blender and blend until smooth. Strain through a sieve into a saucepan, discarding the fibres.
Add jaggery, all powdered spices and salt. Place on high flame and stir well until the jaggery melts completely.
Once melted, lower the flame and simmer for about 10-12 minutes until the chutney reduces and darkens in colour.
It will look semi-thin once cooked but will thicken further as it cools, it should glaze the back of the spoon when hot.
Switch off the flame and let it cool completely. Once cold, transfer to a clean airtight jar for storage. You can store this chutney in the refrigerator and use for a month.

Aloo Toast
Ingredients:
Mixture
BOILED POTATO | उबले आलू 3 MEDIUM SIZED (DICED)
ONION | प्याज़ 1 MEDIUM SIZED (DICED)
CAPSICUM | शिमला मिर्च 1 MEDIUM SIZED (DICED)
SPICY GREEN CHUTNEY | तीखी हरी चटनी 2 TBSP
MEETHI CHUTNEY | मीठी चटनी 4–5 TBSP
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
CHAAT MASALA | चाट मसाला A LARGE PINCH
RED CHILLI FLAKES | लाल मिर्च फ्लेक्स A PINCH
SALT | नमक TO TASTE

Assembly & Toasting
BREAD SLICE | ब्रेड स्लाइस 2 NOS.
SOFT BUTTER | मक्खन AS REQUIRED
BUTTER | मक्खन AS REQUIRED (FOR TOASTING)

Topping
PROCESSED CHEESE | प्रोसेस्ड चीज़ AS REQUIRED (GRATED)
NYLON SEV | नायलॉन सेव AS REQUIRED
LEMON JUICE | नींबू का रस AS REQUIRED
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
CHAAT MASALA | चाट मसाला A PINCH
MASALA CHANA DAL | मसाला चना दाल AS REQUIRED
POMEGRANATE SEEDS | अनार के दाने AS REQUIRED

Method:
In a large bowl, add the diced boiled potatoes, diced onion, diced capsicum along with the remaining ingredients of the mixture. Mix gently with light hands so the potatoes do not break. Taste and adjust seasoning.
Take the bread slices and spread soft butter generously on one side of each. Spoon the filling onto the buttered side and spread it out evenly.
Place a tawa on high flame and let it get moderately hot. Add butter and let it melt.
Place the loaded bread slices filling side up on the tawa. Cover and toast on low flame until the underside is perfectly golden and crispy and the filling is warmed through from the steam.
Once toasted, transfer the bread toast onto a board and cut into pieces as preferred.
Top with grated processed cheese, nylon sev, a squeeze of lemon juice, fresh coriander, a pinch of chaat masala, masala chana dal, and pomegranate seeds.
