Mixed Fruit Jam
Time: 45 mins | Makes: 1 cup
Preparation:
Soak ½ cup raisins in ½ cup water for 20 mins.
Blend 2 tbsp grated beetroot with 1 tbsp water and strain for the juice.
Ingredients:
1 cup peeled, chopped apple
1 cup chopped pineapple
1 cup chopped green grapes
½ cup raisins, soaked
1 tbsp jaggery powder
Pinch of rock salt
2 tbsp beetroot juice
1½ tsp finely chopped apple
1½ tsp finely chopped pineapple
Method:
1. Strain the soaked raisins. Blend all the fruit ingredients until purƩed.
2. Heat a pot, add the purƩe, and cook on a low flame for 25 mins until thick. Stir occasionally.
3. Add jaggery powder and mix well. Switch off the flame, add rock salt, and stir.
4. Once cooled to room temperature, add beetroot juice, chopped apple and pineapple.
5. Stir, transfer to a glass jar, and refrigerate for 30 mins. It stays fresh up to 10 days.
