I love featuring new keto finds β letβs create together! π
Ingredients (makes about 12-15 pieces)
4 tablespoons butter (salted or unsalted β salted gives extra caramel vibe)
2 tablespoons allulose (this is key for the caramel/toffee texture without carbs)
2 tablespoons dried whole milk powder (for classic version)
OR Lower-Carb Version:
Replace the milk powder with 2 tablespoons milk protein powder/isolate (even fewer carbs, more protein!)
Instructions
Melt the butter in a small saucepan over medium heat.
Keep cooking until it browns lightly (nutty aroma, golden color) β about 4-6 minutes. Watch closely to avoid burning!
Remove from heat ( I didn't and should have) and immediately stir in the allulose and milk powder (or protein powder).
Stir vigorously until it thickens to a "peanut butter" consistency (it will look grainy at first, then smooth out).
Drop spoonfuls onto parchment paper or a silicone mat.
Let cool at room temp (chewy caramel texture) or pop in the fridge/freezer (crispy toffee snap).
Store in fridge for up to 2 weeks (or freezer for months).
Texture Magic
Room temp β Soft, chewy caramel
Fridge β Hard, crunchy toffee
Macros (Approximate β whole batch / per serving assuming 12 servings)
Standard Version (with dried whole milk powder)
Whole batch: ~489 calories | 51g fat | 6g total carbs (~0.5g net per piece since allulose doesn't count) | 5g protein
Per serving: ~41 calories | 4.2g fat | 0.5g net carbs | 0.4g protein
Lower-Carb Version (with total milk protein powder)
Whole batch: ~474 calories | 47g fat | 1.3g total/net carbs | 13g protein
Per serving: ~40 calories | 3.9g fat | 0.1g net carbs | 1.1g protein
(Almost ZERO carb in the protein version β perfect for carnivore-ish days!)
